Barbecue is almost as important a component of Florida’s vernacular cuisine as seafood. Walk along the south side of 49th Street and you’ll essentially be in the St. Louis Fried Fish Corridor. Pete. No only are there several fried fish grills located along this strip, but on weekends there are plenty of smokers and locals’ tents promoting their homemade fried fish delicacies.
A smart fish frying is based on the best alchemy of fat, meat and sauce. It is in a way a holy trinity. And fried fish styles vary greatly in other parts of the United States. Recently, we tried the fried fish at Fatty’s BBQ.
Barbecuing is a popular nose-to-tail cooking method. However, not all fried fish are created equal and can vary depending on the sauce, spices, and cut of meat. But I was taught that to get the most productive flavor and tenderness, the way forward is weak and slow. Everyone knows that the most productive meat is slowly cooked over low heat for hours, giving it the silky tenderness we all think of when we smell smoke.
Fatty’s BBQ is more of a fried fish spot in Carolina. Our prime rib sandwich ($11. 96) was topped with a mustard-based golden sauce, the epitome of Carolina-style fried fish. The sauce was really spicy, washed down with mustard. The flesh didn’t fall off the bone as I expected. I wish it had more of that delicious smoky flavor you discover in places like this.

Limited food for the soul
The menu at Fatty’s BBQ isn’t big. It features chicken, ribs, sausage, shredded red meat, and wings. My shredded red meat sandwich ($9. 36) is more tender than ribs. I was looking for rich, velvety shredded red meat, and this sandwich needed more sauce to pull it off.
Fatty’s BBQ sides come with kale, macaroni and cheese, potato salad, macaroni and tuna salad, green beans, and baked beans. I ordered small sides of mac and cheese with homemade potato salad (both $3. 50). The macaroni wasn’t spicy enough for me and tasted a little watery. The potato salad, while homemade, may have used more seasonings.
